Journey to the Heart of Belgium: the Family Bakery of Petr Brazhnikov and Sofia Sandu

The air is filled with the fragrant smell of freshly baked bread. I follow this wonderful smell. The doors are open, and the heat of the hot stoves rushes towards me. The work is challenging in the hands of tall guys. Just one glance from the fragile blond owner of this wonderful bakery, and bread shovels fly up, rearranging the rosy breads in the ovens. The ancient house of the 17th century seems to have been created to preserve the history of the magical bread baked under its roof by this wonderful family

The girl Sofia and the boy Petr lived in different parts of the world. But between them they had one passion: giving people gastronomic joy. The absolutely simple joy of cooking delicious food for people. Since childhood, Petr dreamed of his own cafe-bakery, making his dream come true; at first he studied to become a cook and studied the successful experience of professionals. Growing up, Sofia helped her parents bake village bread in a real wood-burning oven according to old family recipes.

One day, two halves of the same dream met. The little nimble girl turned into an energetic, slender girl, Sofia Sandu, who professionally baked bread in a fashionable restaurant, and the calm, sensible boy became a confident young man, Petr Brazhnikov, who repaid the loan he took from the bank and became the owner of a new cafe. This meeting turned the dream into a real flame of passion. Thus a family and a family business were born.

Nowadays, the cozy warm café-bakery attracts everyone with its warmth to drink aromatic coffee with a crispy croissant and buy fresh pastries: from a first-year student to a gray-haired lawyer, from a young schoolgirl to a charming lady in a coat.

Petr Brazhnikov talks with love about 10 varieties magical Flemish bread, which they bake using ancient technologies from the 18th and 19th centuries. It’s hard for me to name the most delicious, because I’m delighted with the sweet kramyk with raisins, and the black rye with sourdough, and the fluffy vanilla butter. This bakery uses only farm flour, which does not contain preservatives or additives, spring water, aromatic herbs, and only natural products.
